Tasting Notes
Vesuvius was initially made exclusively for James Kidman at Otto Restaurant in Sydney. James used the Vesuvius on his menu for around 6 months as a part of a special Entrée. During this time Vesuvius remained exclusive to James and Otto restaurant.
Named Vesuvius because of it tiny volcano shape this is a pure goat milk cheese.
The cheese blooms a velvety cover of white mould two weeks . We then gently roll the cheese in ash.
As a young cheese Vesuvius is mild and balanced with a slight hint of a creamy blue flavour. The acid present makes this cheese lively and fresh.
This little cheese is both elegant in looks and flavour it also has a tendency to become slightly firmer as it matures.
According to personal preference, this cheese will have a shelf life up to 10 weeks from make date but this is only a guide real intensity occurs well past the best before date.
