Woodside Tapas is a beautiful blend of two South Australian products. Our Woodside Curd and Allisford Farm Organic Hand harvested Garlic.
The Curd is made from fresh local goat milk sourced from Towerview and Oskjberg goat dairies. Pasteurisation is achieved using batch pasteurisation which is very gentle to the milk.
The milk is set using a traditional long set method, overnight. The following day the curd is ladled into cheesecloth bags. We allow the curd to drain for several hours this process is very gentle as the curd has a delicate structure. Tapas is only made in small batches giving us excellent quality control and ensures freshness. Plump garlic cloves are crushed and added to the curd once is has drained with a fine sprinkling of black pepper added. Once seasoned a further draining process occurs for a period of ten days in a controlled environment.
The Tapas is very elegant with just a hint of Garlic and Pepper so as to show off the excellent quality of the milk.
A must for the TAPAS plate, or cheese board, fabulous with warm crusty bread and any seasonal char grilled vegetables.
