Harissa cous-cous and Woodside Feta tagine with yoghurt flatbread « Return to recipes index


You will need:
  • Tagine Ingredients
  • 1 packet plain couscous ,cooked as directions on packet or precooked
  • 5 hot chilies
  • 1 tin roasted capsicum 250 g
  • 1 preserved lemon
  • 2 garlic cloves
  • ½ bunch coriander roughly chopped
  • splash lime juice
  • pinch cumin
  • pinch salt
  • extra virgin olive oil
  • 100 g Woodside feta cheese diced
  • 1 bunch fresh chives finely chopped,fresh mint
  • 1 small jar grilled zuccines and eggplants from the deli section of supermarkets
  • Yoghurt Flatbread Ingredients
  • 500g self raisinfg flour
  • 1 tbsp maldon salt
  • 1 tbsp baking powder
  • 500 g natural greek yoghurt
  • 2 tbsp of dukkah
  • pinch of paprika
How to create:

Tagine Instructions

mince chilies, capsicum ,preserved lemon , splash of olive oil and garlic in stick blender, fold in coriander, cumin and squeezed of lime juice ,season

cook in a tagine dish with cous cous for 5 minutes serve with fresh chives and mint and crumble fetta on top

Yoghurt Flatbread Instructions

mix all ingredients in food processor till combined and dough consistency ,add more flour if needed

knead for 2 min on to a floured surface and cut in 10 small pieces ,rolled to thin circles

grilled onto bbq or grilled pan served with tagine

great to serve with grilled zuccinies or eggplant from the deli section

option: add small amount feta to flatbread mix for more flavour
