Tasting Notes
A perfect blend of our fresh chevre, organic garlic and black pepper.
The Chevre is made from fresh local goat milk sourced from Towerview and Oskjberg goat dairies. Pasteurisation is achieved using batch pasteurisation which is very gentle to the milk.
The milk is set using a traditional long set method overnight. The following day the curd is ladled into cheesecloth bags. We allow the curd to drain for several hours this process is very gentle as the curd has a delicate structure. This product is pure with only a small amount of salt being added. The plump garlic cloves are then crushed and added with a fine sprinkling of black pepper. Once seasoned a further draining process occurs for a period of ten days in a controlled environment.
Manon is then shaped and wrapped in Vine Leaves and a futher 5-6 days maturing is allowed. This is a very elegant cheese with just a hint of Garlic and Pepper so as to show off the excellent quality of the milk.
A must for the cheese board and fabulous with warm crusty bread and a drizzle of good Olive Oil.
