Garlic & Pepper Chevre
The Woodside Allium Piper is a beautiful blend of two high quality South Australian products. Our Woodside Chevre and Allisford Farm Organic hand harvested Garlic.
The Chevre is made from fresh local goat milk sourced from Towerview and Oskjberg goat dairies. Pasteurisation is achieved using the batch method which is very gentle to the milk.
The milk is set using a traditional overnight set referred to as a lactic set. The following day the curd is ladled into cheesecloth bags. We allow the curd to drain for several hours this process is very gentle as the curd has a delicate structure. This product is pure with only a small amount of salt being added. The plump garlic cloves are crushed and added with a fine sprinkling of black pepper. Once seasoned a further draining process occurs for a period of ten days in a controlled environment.
Allium Piper is very elegant with just a hint of Garlic and Pepper so as to show off the excellent quality of the milk.
A must for the cheese board and fabulous with warm crusty bread.
